CURRY TURKEY MY WAY
I attempted my first marinade. The result was not bad.
What you need for three people:
Two slices of turkey breast cut into one inch wide stripes
1/3 cup of plain yogurt
1 tsp of curry powder
A pinch of: black pepper, cardamom, cinnamon, cumin, nutmeg (or any other spices sitting forlornly in your cupboard and reclaiming their primadonna status)
1 shallot thinly sliced
A pinch of salt
1 tbsp of olive oil plus some to brush the baking pan
1 fresh sliced chili pepper
2 tomatoes thinly sliced
How to do it:
Rub the turkey with the spices until well coated. Add the shallot, salt, oil and yogurt and stir well. Put the whole thing covered in the fridge for at least half an hour.
Preheat the oven with the grill on.
Brush a baking pan with olive oil, scatter the fresh chili pepper on the bottom, then arrange the turkey slices carefully ladling the shallots on top. Top it all with the tomato slices.
Bake uncovered for half an hour or until done.
We enjoyed it with some mashed potatoes and steamed broccoli.
