Quick meals

I have not been cooking much lately, despite adding too many new cookbooks to my shelves.

Here I share my last two super easy weekday dinners:

Spaetzle with spinach and fontina

1 tbsp olive oil
A dollop of butter,
One shallot, thinly sliced
Pinch of salt
450 g frozen spinach
80 g fontina
2 tbsp cream cheese
500 g store bought spaetzle (or make your own )

Sauté the shallot in the oil, butter and salt until translucent.
Add the spinach. Turn them once. Add the cheeses and the spaetzle. Cook for 6 minutes (as told in my package, so check yours).
Enjoy. We (two chubby and hungry adults) ate them all. Yet I believe that three or four people could have dinner with it.

Orzotto con la zucca

1 tbsp olive oil
One shallot, thinly sliced
Pinch of salt
1 winter squash, peeled and cubed
125 g hulled barley
250 ml water, hot
Parmigiano to taste
Chili pepper

Sauté the shallot in the oil  salt for a couple of minutes. Add the squash and heat it through. Add the barley and toast if for a couple of minutes. Add the water. Cook under pressure for 10 minutes (from the moment it starts whistling) or until done (30 to 45 minutes) on medium heat.
Serve with parmigiano and chili pepper and a drizzle of good olive oil.
There is plenty for three/four people.
