quick oatmeal cookies




I love oatmeal cookies and I am still hunting for my favorite recipe.

I tweaked (out of necessity, as usual) one of my favorite bakers’ recipes, none less than the gorgeous Claire Ptak and if you do not have her last book, I definitely recommend it. 
 
So back to her beautiful oatmeal and candied lemon cookies, which you can see in a beautiful tweaked version here
 
Beat 250 g European butter, softened, with 200 g icing sugar and 20 g brown sugar until creamy but not light and fluffy (love this, it shortens up the work). Add the zest from 1 lemon, 1 tsp vanilla and 1 chia egg (1 Tbsp chia seeds, ground, mixed with 3 Tbsp water).

Sift 150 g plain flour, 60 g spelt wheat (nuttiness galore without nuts), 1 tsp bicarbonate, 1 tsp cinnamon, a pinch of salt. Add 100 g dried cranberries.

Mix everything, portion in about 16/20 cookies in two baking trays.

Freeze for at least 1 hour (if you feel like a beautiful cookie), bake (straight away if you like ugly cookies asap) @ 180 °C for 15/20 minutes.

Notes: I have already decreased the sugar amount, compared to the original version, but I will decrease it even further. Sugar keeps the things chewy, if that’s you preference, you may wish to add the recommended 100 g brown sugar. I have used some homemade icing sugar, because I had that. I must admit that it considerably decreases the creaming factor. So if you own a thermomix or if you just have a icing sugar bag, you may want to try it.

The original recipe calls for homemade candied peel (which I do not have and I am not very fond of), sultanas instead of cranberries, only plain flour skipping the wheat (but I must finish that wheat bag, it’s been sitting in my pantry way too long, I cannot wait for it to walk on its own to the garbage bin, I’ve already done that with the linseeds, disgusting, by the way), and a real egg (yes, I also run out of eggs, occasionally).

The cookies are softer the day they are baked and then they get crunchier and are just perfect vessel for dunking.
